Tasting Notes:  This versatile wine is fairly bursting with the aromas of freshly picked strawberries, rose petals, and  a hint of citrus. The intense strawberry, star fruit, and gooseberry character is complimented by a slight sweetness and balanced by crisp acidity. Serious wine for food or for sipping, now available in pink.
Winemaker's Notes:  We  are always pleased with the fruit character in this wine, made with 100% Cabernet Franc from our estate vineyard. The grapes are harvested right at the first point of complete maturity, exhibiting well-developed fruit and spice flavors. The grapes are imediately crushed and given about 4 hours of skin contact to extract some color before pressing. The juice was placed in a temperature controlled fermenting tank, chilled, and inoculated with the classic yeast for semi-sweet, fruity wines, Epernay 2. Cold fermentation preserves the delicate fruit character and allows us to stop fermentation to retain a slight sweetness in the finished product. Bottled in May 2007. 350 cases made.
